At Shift it personal training we are against fad diets or worse still starving yourself to lose weight. We believe the only way to lose weight properly is through regular exercise and a healthy balanced eating plan that can be followed for the rest of your life.

Moderation not starvation is the key to healthy weight-loss, depriving yourself of the things you like, or even worse, not eating, is a recipe for disaster. Eat and drink the things you like - but be sensible.

Recipe of the Month
April

Watercress Soup serves 4

2 bunchess of watercress (about 200g) thoroughly cleaned
small knob of butter
2 onions, chopped
225g potatoes, coarsly chopped
2 pints vegetable stock or water
whole nutmeg (for grating)
salt & pepper
low fat creme fraiche, to serve
 
1. Remove leaves from the stalks of watercress and set aside. Roughly chop stalks .
2. Melt the butter in a large pan over a medium heat, add the onions and cook for 4-5mins, until soft. Do not brown.
3. Add the potatoes to the pan and mix well with the onions. Add watercress stalks and the stock. Bring to the boil, then reduce heat, cover and simmer for 15-20mins, until potato is soft.
4. Add watercress leaves and stir to heat through. Remove from heat and transfer to a food processor or blender. Blend until smooth and return to rinsed-out pan . Re-heat and season with salt & pepper, add a good grating of nutmeg.
Serve in warmed bowls with a small spoonfull of creme fraiche!
